Pepperoni Pizza Rolls

My poor kids have been in a lunchtime rut for a while now. All I ever make them is turkey and peanut butter sandwiches. No, not together. Turkey for the girl. Peanut butter for the boy. My son always asks for “peanut butter…(yelling) and JAM!”. Apparently he’s unclear if I remember from the previous 200 sandwiches I’ve made him  that I  know he likes jam. One of the few things he likes better is pizza. So today I broke free from the mid-day doldrums and made them these easy little pizza rolls. Not the healthiest of lunches, but I had all the ingredients in my fridge and needed to use them up.

Do you ever do that? Stare into the chasm that is your refrigerator hoping some combination of ingredients pops out at you and forms the perfect meal? Well, that’s what I did today. I had the remnants of a bag of mozzarella, some leftover marinara, a tube of crescent dough (about to expire) and half a bag of turkey pepperoni.

Perfect for an easy and fun lunch for my kids. They loved these! I do not recommend using crescent dough as it’s a little tricky to get rolled up because of the perforations. However, if you are amazing at crimping all the edges together to make a uniform sheet of dough or if you are (like me) ok with slightly messed up rolls, it works in a pinch.

Melty Cheesy Goodness

I spazzed out because I was on the phone with my sister and trying to roll up this dough at the same time. Instead of starting with the short end, I began with the long side and it still worked just fine. Not as many spirals for each roll, but whatever. Still cheesy and delicious. This recipe is for a party sized appetizer batch. I just made one roll of dough because that’s all I had. These would be great for a football party, New Year’s Eve or a game night too.

Pepperoni Pizza Rolls

Pepperoni Pizza Rolls
(adapted from Tidy Mom)

2 cans refrigerated pizza crust
garlic salt
Italian Seasoning
1 cup sliced and chopped pepperoni
1 cup shredded mozzarella cheese (or whatever cheese you like on your pizza)
1/3 cup Parmesan Cheese
1 T melted butter

Preheat oven to 425
Dust a  large cutting board or piece of wax paper with flour and roll out each pizza crust.
Brush lightly with melted butter and season each crust with garlic salt and Italian seasoning.
Top with  mozzarella and meat.
Starting with a short end, roll crust into a tight log and slice into 1″ sections.
Place on lightly greased pan, sprinkle with parmesan and bake for 10-12 mins.
Serve with marinara sauce for dipping.
